What you'll need: Three bowls and a baking tray… also:
- 1. Cut each breast in half lengthways. Season with salt and pepper.
- 2. Set up your three bowls: flour, scrambled egg, breadcrumbs. Dip in flour, shake off. Dip in egg, shake off. Press into the breadcrumbs.
- 3. Lay on a tray and drizzle a little olive oil over each one.
- 4. Bake at 375°F for 20 minutes, flipping halfway.
